Close your eyes. Imagine the scent of warm spices drifting through a cozy kitchen, fairy lights twinkling on the tree, and a showstopping cake sitting proudly on the table like it owns the whole festive season. That cake? You're about to make it.

This is our Dreamy Christmas Cake — a moist, spiced fruit cake wrapped in clouds of snowy white frosting, decorated like something straight out of a winter wonderland. It's the kind of cake that makes guests go actually speechless. Let's get baking!


What You'll Need

For the Cake

  • 300g mixed dried fruit (sultanas, raisins, cranberries)

  • 100g glacé cherries, halved

  • 100ml brandy or orange juice

  • 225g unsalted butter, softened

  • 225g dark brown sugar

  • 4 large eggs

  • 225g plain flour

  • 1 tsp baking powder

  • 2 tsp mixed spice

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • Zest of one orange and one lemon

For the Dreamy Frosting

  • 4 egg whites

  • 250g caster sugar

  • A pinch of cream of tartar

  • 1 tsp vanilla extract

To Decorate

  • Edible silver stars and snowflakes

  • Sugared rosemary sprigs

  • Cranberries dusted in icing sugar

Let's Make the Magic Happen

Step 1 — Soak Those Fruits

The night before, combine your dried fruit, glacé cherries, and brandy (or orange juice) in a bowl. Cover and let them soak overnight. This step is everything — it's where the deep, dreamy flavour begins.

Step 2 — Mix the Batter

Preheat your oven to 150°C (fan 130°C). Beat the butter and sugar together until light and fluffy — about 4 minutes. Add the eggs one at a time, mixing well between each addition. Fold in the flour, baking powder, spices, and zest gently. Finally, stir in your beautifully soaked fruit.

Step 3 — Bake Low and Slow

Pour the batter into a greased and lined 20cm round tin. Bake for 2 to 2.5 hours until a skewer comes out clean. If the top starts browning too quickly, loosely cover with foil. Let it cool completely in the tin. Patience, darling — good things take time.

Step 4 — Whip Up the Dreamy Frosting

Place egg whites, sugar, and cream of tartar in a heatproof bowl over simmering water. Whisk constantly for about 5 minutes until the sugar dissolves. Remove from heat, add vanilla, then beat with an electric mixer until you get gorgeous, glossy, stiff peaks. This is your edible cloud.

Step 5 — Decorate Like a Dream

Swirl and swoosh the frosting all over the cake using a palette knife or the back of a spoon. Go wild — peaks and swirls look beautifully rustic. Pile on your sugared cranberries, rosemary sprigs, and scatter edible stars across the top like a midnight sky.
